You probably could plan everything except the venues. I wouldn't book rooms for a wedding unless I had a set date. This could help save money. This shows confidence that one would meet the right person at some point. However, one issue is what if the decorations or favors are out of fashion? On the other hand, it's the personal tastes that matter.
